Ingredients

  • 2 avocados

Egg White Ingredients:

  • silken tofu
  • 300 millilitres unsweetened soy milk
  • 4 tablespoons nutritional yeast
  • 2 tablespoons olive oil
  • 3 teaspoons agar powder
  • 1 teaspoon kala namak salt

Egg Yolk Ingredients:

  • ORGRAN Vegan Easy Egg™
  • 240 millilitres water
  • 2 1/2 teaspoons oil

Method

  • Cut avocado to half, scoop out carefully, please do not break the skin and place it on tray.
  • Blend egg white ingredients in blender.
  • Pour into pan and cook for 5 mins.
  • Pour into avocado skin.
  • Let it set in the fridge for 30 mins.
  • Mix Vegan Easy Egg™ ingredients and pour into pot.
  • Cook for 5 mins or until thicken
  • Peel egg from avocado skin.
  • Carve out the centre to make a whole.
  • Spoon in egg yolk.
  • Serve with toast and avocado.
  • Sprinkle with salt & pepper (optional).
