Pretty in Pink Pasta - Orgran Health & Nutrition

  • 1 package ORGRAN Spiral Pasta of choice

Sauce Ingredients:

  • beetroot, roasted & peeled
  • 1/2 teaspoon lemon juice
  • pinenuts, lightly toasted
  • 1/3 cup vegetable stock
  • 1 teaspoon minced garlic
  • 1 teaspoon dried rosemary
  • salt & pepper, to taste

Garnish Ingredients:

To Serve:

  • fresh rocket


  • To make the sauce, add the sauce ingredients to a blender jug and blend until smooth. Season with salt & pepper and set aside.
  • Cook the pasta according to packet directions, or until al dente.
  • While the pasta cooks, thinly slice the onion into half-moons, and over a medium heat, sauté the onion gently in 1/2 tsp lemon juice, or until lightly caramelised.
  • Once the pasta is cooked, drain, rinse, and place back in the pot. Pour some sauce over the pasta and stir to thoroughly combine. Add more sauce, if required, and season if necessary!
  • To serve, place the fresh rocket at the bottom of four bowls, and top with the saucy pasta! Dress with the pinenuts and caramelised onion, enjoy.
