Pancakes w/Lemon Sauce - Orgran

Pancake Ingredients:

  • 1 package ORGRAN Apple & Cinnamon Pancake Mix
  • 2 eggs
  • 1 1/2 cups plain yoghurt
  • 3 tablespoons honey
  • butter or monounsaturated margarine
  • 2 teaspoons finely grated lemon rind
  • 1/2 cup water
  • 1/2 teaspoon vanilla

Lemon Sauce Ingredients:

  • 1/2 cup lemon juice (approx. 4 lemons)
  • 1/2 cup water
  • 2/3 cup sugar
  • 3 tablespoons honey


Pancake Method:

  • 1. Put all the ingredients into the bowl of an electric food processor or blender. Blend to combine ingredients.
  • 2. If using an electric pancake cooker, cook pancakes according to the manufacturer’s instructions. If using an electric frypan, heat to 160°C (325°F). (Point No 5-6 on a dial of 1-10.) Pan will cook pancakes more evenly if it is seasoned first. This is done by melting 1 teaspoon of butter in pan. Spread butter over base of pan. Heat until butter is golden brown. Using paper towel, wipe butter from pan.
  • 3. Spray pan with cooking spray.
  • 4. Place 2 tablespoons of mixture into pan for each pancake.
  • 5. Cook until bubbles appear on the surface. Turn and cook on reverse side until golden brown.
  • 6. Place plastic wrap over a fine wire rack. When cooked, remove pancakes from frypan and place onto wire rack. Cover with plastic wrap to prevent drying out.
  • 7. While pancakes are cooking make Lemon Sauce

Lemon Sauce Method:

  • Preparation time 5 minutes
  • Cooking time 20 minutes
  • 1. Pour lemon juice and water into a small saucepan. Bring to the boil. Reduce heat and add sugar and honey. Stir until sugar dissolves. Boil gently until sauce reduces and slightly thickens.
  • OR
  • Pour lemon juice and water into a small microwave-safe bowl. Microwave on high for 1 minute. Stir in sugar and honey. Microwave on high for 30 seconds and stir. Microwave on medium-high for 30 seconds and stir. Continue to microwave on medium-high for 30-second intervals and stir until sauce boils and thickens.
  • If using an electric frypan cook at 160°C (325°F), point 5-6 on a dial of 1-10. Pancakes can be served with Lemon Sauce and icecream, cream, yoghurt or cottage cheese, as desired.
