  • 1 purple sweet potato
  • handful of fresh greens
  • chickpea tuna salad
  • 1 cucumber
  • 1/4 purple cabbage
  • pumpkin

To Serve:

  • ORGRAN Corn Crispibread™


  • Roast the pumpkin in the oven with fresh rosemary sprinkled on top for 40 mins.
  • Meanwhile, steam the sweet potato until soft. Prepare chickpea tuna.
  • Assemble your veggies, pumpkin, sweet potato & chickpea tuna salad in a bowl and season with chilli flakes, black pepper and lemon juice
  • Serve together with crispibread™ So good for scooping up that chickpea ‘tuna’. ENJOY
