Hot Chicken Salad - Orgran

Ingredients

Chicken Ingredients:

  • 4 chicken fillets
  • 1/4 cup ORGRAN All Purpose Plain Flour
  • 3 cloves garlic
  • 1 teaspoon fresh chilli, finely chopped
  • 1 tablespoon lemon zest, finely grated
  • 1/4 cup lemon juice
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon brown sugar
  • 1/4 cup fresh thyme leaves, finely chopped
  • 3 tablespoons olive oil

Dressing Ingredients:

  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • salt and freshly ground white pepper, as desired

To Serve:

  • baby rocket leaves
  • baby tomatoes
  • 1/2 cup freshly chopped thyme
  • 2/3 cup shaved parmesan
  • This recipe will have better flavour if you marinate the chicken overnight

Method

Chicken Method:

  • 1. Cut chicken into small cubes approx. 1.5cm (¾”).
  • 2. Put flour into a zip seal bag. Add chicken pieces and toss to coat with flour.
  • 3. Put chicken pieces into a flat container.
  • 4. Peel and crush garlic. Put into a small bowl. Add chilli, lemon rind, lemon juice, olive oil, sugar and thyme. Whisk well to combine ingredients. Pour marinade over chicken. Cover and refrigerate over night if possible.
  • 5. Pour 3 tablespoons olive oil into a medium-sized frying pan. Add chicken. Cook over a gentle heat until chicken is cooked. Stir frequently to prevent chicken sticking to pan.
  • 6. While chicken is cooking, prepare dressing.
  • 7. When chicken is cooked, remove from pan and drain on absorbent paper.

Dressing Method:

  • Preparation time 5 minutes
  • 1. Pour oil and lemon juice into a small bowl. Add salt and pepper and stir to combine ingredients.
  • 2. Serve dressing over salad.

To Serve:

  • 1. Place rocket into a serving bowl. Add tomatoes, thyme and parmesan.
  • 2. Add chicken to salad in bowl.
  • 3. Top with parmesan.
  • 4. Pour dressing over salad.
