Gamekeeper’s Sauce - Orgran



  • 1 large knob of butter (or low fat margarine)
  • 1 tablespoon ORGRAN All Purpose Plain Flour
  • 1 cup Shiraz
  • 1/2 cup fresh horseradish, grated
  • 1 'Massel'™ 7’s stock cube (beef)
  • 2 -4 tablespoons blueberry jam
  • 1/2 punnet of blueberries
  • maple syrup to taste
  • pan juices
  • 1 tablespoon duck fat
  • rock salt and cracked pepper to taste


  • Place a large knob of butter (salt free) into a sauce pan on low heat
  • Add flour and combine till like a paste
  • Gradually add wine and increase heat to a busy simmer (don’t boil)
  • Let the sauce reduce by a third and pulverise the grated horse radish using a hand blender, till a fibrous liquid.
  • Combine into sauce tasting for the flavour of the horseradish (hold back a little)
  • Add stock cube and adjust seasoning
  • Add blueberry jam whilst tasting, you want to still taste the horseradish, leaving the sauce a little tart
  • Stir in the fresh blueberries
  • Add the pan or roasting juices
  • If the sauce is a little thick add small amounts of water
  • Stir through the duck fat which will make the sauce shiny and rich
  • Adjust sweetness with a little maple syrup – at least 1 tablespoon
  • Adjust seasoning again and enjoy.
  • A little goes a long way. What you don’t use will last in the refrigerator for about a week.
