Ingredients

Pesto:

  • 1/3 cup edamame, shelled frozen
  • 1/2 cup peas, frozen
  • 2 tablespoons basil pesto
  • 1 tablespoon semi dried tomato strips (no oil)
  • 2 artichoke hearts (jarred in brine)

To Serve:

  • fresh basil leaves

Method

  • Cook pasta per packet directions in salted water.
  • Pulse first 5 ingredients in a food processor until mixed. Add a little water or stock if you want it smoother.
  • Add to a pan and heat through.
  • Stir through drained pasta.
  • Top with fresh basil leaves and some vegan parmesan.
