Delectable Pea & Edamame Pesto Pasta - Orgran Health & Nutrition

- ORGRAN Quinoa Spirals Pasta
- 1/3 cup edamame, shelled frozen
- 1/2 cup peas, frozen
- 2 tablespoons basil pesto
- 1 tablespoon semi dried tomato strips (no oil)
- 2 artichoke hearts (jarred in brine)
- fresh basil leaves
- Cook pasta per packet directions in salted water.
- Pulse first 5 ingredients in a food processor until mixed. Add a little water or stock if you want it smoother.
- Add to a pan and heat through.
- Stir through drained pasta.
- Top with fresh basil leaves and some vegan parmesan.
