Crepes w/Baked Crusted Strawberries & Citrus Sauce - Orgran

  • Serves: 6



Crepe Ingredients:

  • 1 egg
  • 300 millilitres milk
  • 1/4 teaspoon vanilla
  • ORGRAN All Purpose Plain Flour

Citrus Sauce Ingredients:

  • 1 tablespoon butter or monounsaturated margarine
  • sugar
  • finely grated rind of ½ lemon and ½ orange
  • 1 cup citrus juice made up from approx. 2 lemons and 1 orange
  • 1 tablespoon ORGRAN All Purpose Plain Flour
  • 1 tablespoon brandy

Crusted Baked Strawberries Ingredients:

  • 24 large strawberries (allow approx. 4 strawberries per serve)
  • 2 egg whites
  • 1 cup caster sugar, for rolling strawberries


Crepes Method:

  • Preparation time 20 minutes
  • Cooking time 20 minutes
  • 1. Break egg into the bowl of an electric blender or food processor. Pour in milk and vanilla. Add flour. Blend to thoroughly mix ingredients. Allow batter to settle while preparing crepe maker.
  • 2. Heat the crepe maker according to the manufacturer’s instructions.
  • 3. Pour batter into a flat dish. Dip the hot crepe maker into the batter. When making gluten free crepes, make sure crepe maker is thoroughly coated with batter. Cook according to the manufacture’s instructions with the electric crepe maker.
  • 4. Place a sheet of plastic wrap onto a flat surface.
  • 5. When crepe is cooked, carefully remove from crepe maker and put onto plastic wrap. Leave for 30 approx. seconds. Fold into quarters.
  • 6. Repeat with remaining crepe batter.
  • 7. When cooking is complete, serve with Citrus Sauce and Baked Crusted Strawberries.

Citrus Sauce Method:

  • Preparation time 15 minutes
  • Cooking time 5 minutes
  • 1. Place butter, sugar, rinds, juice and flour into the bowl of an electric blender or food processor. Blend to combine ingredients.
  • 2. Microwave on high for 1 minute and stir. Continue to microwave on medium-high, stirring at 30-second intervals until sauce is thickened.
  • 4. Allow to cool slightly. Stir in brandy.

Crusted Baked Strawberries Method:

  • Preparation time 15 minutes
  • Cooking time 15 minutes
  • 1. Preheat oven to 170°C (350°F).
  • Prepare a flat baking tray by spraying with baking spray. Line tray with baking paper. Spray baking paper.
  • 2. Leave hulls (green tops) on strawberries. Pull the hull back from flesh of strawberry. (If hull is removed, there is more chance of the strawberry falling apart while baking.)
  • 3. Place egg whites into a small bowl. Lightly whisk.
  • 4. Brush each strawberry with egg white. Toss in caster sugar.
  • 5. Place strawberries onto baking tray.
  • 6. Place into a moderately-hot oven and bake for approx. 15 minutes.
  • 7. Remove from oven and leave on tray until sugar sets around strawberries.
