Chickpea Pasta - Orgran

- 1 package ORGRAN Quinoa Penne (or penne of choice)
- can chickpeas, drained
- can 3-bean mix, drained
- can water chestnuts, drained & finely chopped
- 1/2 cup carrot, finely chopped (or grated)
- 2 shallots, finely chopped
- 2 sticks celery, finely chopped
- 1/4 red capsicum, finely chopped
- 1 small zucchini, finely chopped
- freshly ground pepper, as desired
- 1/2 cup french dressing
- 1/2 cup balsamic dressing
- 1/2 cup mayonnaise
- 3 teaspoons prepared mustard
- fresh parsley, finely chopped
- 1. Cook pasta according to instructions on the packet. Cook until just tender. Strain and discard water. Allow to cool. Place into a large serving bowl.
- 2. Add remaining ingredients to pasta. Lightly toss through pasta.
- 1. Place all the ingredients into an electric food blender and mix well.
- 2. Pour over pasta just before serving.
- Garnish with finely chopped parsley.
