Avocado Penne - Orgran

  • ORGRAN Penne of choice
  • 2 ripe avocados, halved, seeded and peeled
  • 1/2 cup fresh basil leaves
  • 1 clove garlic, minced
  • 2 tablespoons lemon juice
  • salt & pepper, to taste
  • 1/3 cup olive oil
  • 1 cup cherry tomatoes, halved
  • 1/2 cup canned corn kernals, drained & rinsed


  • In a large pot of boiling water, cook pasta according to packet instructions and drain well.
  • To make the avocado sauce, combine avocados, basil, garlic and lemon juice in a bowl and mix together. Season with salt and pepper. Slowly add olive oil while continuing to mix.
  • In a large bowl, combine pasta, avocado sauce, cherry tomatoes and corn.
  • Serve immediately and enjoy.
