Avocado Penne - Orgran

- ORGRAN Penne of choice
- 2 ripe avocados, halved, seeded and peeled
- 1/2 cup fresh basil leaves
- 1 clove garlic, minced
- 2 tablespoons lemon juice
- salt & pepper, to taste
- 1/3 cup olive oil
- 1 cup cherry tomatoes, halved
- 1/2 cup canned corn kernals, drained & rinsed
- In a large pot of boiling water, cook pasta according to packet instructions and drain well.
- To make the avocado sauce, combine avocados, basil, garlic and lemon juice in a bowl and mix together. Season with salt and pepper. Slowly add olive oil while continuing to mix.
- In a large bowl, combine pasta, avocado sauce, cherry tomatoes and corn.
- Serve immediately and enjoy.
