Vegan Eggs with Potatoes - Orgran

- 1 medium potato, diced into 2cm cubed
- 1 tbs olive oil
- sea salt & pepper to taste
- handful of rocket leaves or baby spinach
- spring onions, sliced on a angle
- radish sprouts
- 1. Place potatoes on a small baking tray with olive oil and seasoning and bake in 190C fan forced oven for 20 mins.
- 2. Prepare the ORGRAN Vegan Easy Egg™ by whisking ingredients together. Pour into heated frying pan with a drizzle of olive oil and whisk while heating and cooking to resemble ‘scrambled eggs’.
- 3. Assemble breakfast by placing greens on plate, then the potatoes and scrambled vegan eggs in the centre. Enjoy x
