Vegan Eggs with Potatoes - Orgran

Vegan Eggs


  • 1 medium potato, diced into 2cm cubed
  • 1 tbs olive oil
  • sea salt & pepper to taste


  • handful of rocket leaves or baby spinach
  • spring onions, sliced on a angle
  • radish sprouts


  • 1. Place potatoes on a small baking tray with olive oil and seasoning and bake in 190C fan forced oven for 20 mins.
  • 2. Prepare the ORGRAN Vegan Easy Egg™ by whisking ingredients together. Pour into heated frying pan with a drizzle of olive oil and whisk while heating and cooking to resemble ‘scrambled eggs’.
  • 3. Assemble breakfast by placing greens on plate, then the potatoes and scrambled vegan eggs in the centre. Enjoy x
