The Clever Chocolate Cake - Orgran

Ingredients

Chocolate Cake #1 Ingredients:

  • butter or monounsaturated margarine
  • 1 1/2 cups caster sugar
  • 1/2 teaspoon vanilla
  • 3 eggs, lightly beaten
  • dark chocolate melts
  • 2 tablespoons cocoa
  • 1/2 cup hot water
  • plain Greek style yoghurt
  • 1/4 teaspoon bicarbonate of soda
  • 2 cups ORGRAN Self Raising Flour

Chocolate Cake #2 Ingredients:

  • 1 package ORGRAN Chocolate Cake Mix
  • 165 millilitres milk or water
  • 2 eggs, lightly beaten
  • butter or monounsaturated margarine

Marshmallow Topping Ingredients:

  • 2/3 cup cold water
  • 2 tablespoons gelatine
  • 1 1/2 cups sugar
  • 1 teaspoon lemon juice
  • 1/4 cup pure icing sugar, sifted
  • 1/2 teaspoon vanilla
  • 1 egg white

Method

Chocolate Cake Mix #1 Method:

  • 1. Preheat oven to 160°C (325°F).
  • 2. Prepare a 33cm x 23cm (13”x10”) cake tin by spraying with cooking spray. Line base of tin with baking paper.
  • 3. Cream butter, sugar and vanilla.
  • 4. Gradually add egg to cream mixture, beating well after each addition.
  • 5. Place chocolate into a microwave-safe bowl. Microwave on medium-low for 30 seconds and stir. Continue to microwave on medium-low for 30-second intervals and stir, until chocolate is melted.
  • 6. Place cocoa into a small mixing bowl. Gradually stir in boiling water. Allow to cool.
  • 7. Place yoghurt into a small mixing bowl. Stir in bicarbonate of soda. Stir in cocoa mixture and melted chocolate. Stir into creamed mixture.
  • 8. Sift flour into a small bowl. Stir into mixture in bowl. Mix well to combine ingredients.

Chocolate Cake Mix #2 Method:

  • 1. Combine cake mix ingredients according to the directions on the packet.

To Combine:

  • 1. Pour Chocolate Cake Mi #1 into Chocolate Cake Mix #2 and stir well to combine.
  • 2. Pour cake mixture into prepared tin.
  • 3. Place into a moderate oven and bake for approx. 55 minutes or until cooked in the centre when tested.
  • 4. When cooked, remove from oven.
  • 5. Leave in tin to cool.
  • 6. When cold, turn out onto a serving plate.
  • 7. Decorate with Marshmallow Topping.

Marshmallow Topping Method:

  • 1. Pour water into a small bowl. Sprinkle gelatine over water. Allow to stand for 5 minutes.
  • 2. Stir sugar and lemon juice into soaked gelatine.
  • 3. Put into a medium-sized saucepan. Stir over a gentle heat until sugar is dissolved.
  • 4. Bring to the boil. Boil gently for 2 minutes taking care to keep mixture boiling without boiling over. Do not stir.
  • 5. Remove from heat and cool slightly.
  • 6. Pour into the large bowl of an electric food mixer.
  • 7. Add icing sugar and vanilla. Beat until mixture is thick and white.
  • 8. Place egg white into a separate, clean dry bowl. Beat until stiff. Fold into marshmallow mixture.
  • 9. Spread over cake.
  • 10. Sprinkle with fine chocolate.
  • A chocolate cake mixture is made; an Orgran Chocolate Cake Mix is made and the two mixtures are mixed together before the cake is baked. This makes a large cake that is suitable for a special occasion. The cake is topped with marshmallow.
