Sticky Date Muffins - Orgran

Ingredients

  • 3/4 cup warm water
  • dates, finely chopped
  • 1 teaspoon bicarbonate of soda
  • butter or monounsaturated margarine
  • 1 cup brown sugar
  • 1/2 teaspoon vanilla essence
  • 3 eggs
  • 1 1/2 cups ORGRAN Self Raising Flour
  • 1 cup ORGRAN All Purpose Plain Flour

Caramel Sauce Ingredients:

  • 250 millilitres pouring cream
  • butter or monounsaturated margarine
  • 1 cup brown sugar

Sticky Date Muffin Ingredients:

    Method

    Sticky Date Muffins Method:

    • Preparation time includes time to allow dates to soften in boiling water
    • 1. Preheat oven to 170°C (350°F).
    • 2. Prepare 2 x 12-cup muffin trays by spraying with cooking spray. Line base of cups with circles of baking paper.
    • 3. Pour water into a small saucepan. Add dates and bring to the boil. Remove from heat. Stir in bicarbonate of soda. Allow to stand for 15 minutes.
    • OR
    • Pour water into a small microwave safe bowl. Add dates. Microwave on high for 1 minute and stir. Microwave for another minute and stir. Stir in bicarbonate of soda. Allow to stand for 15 minutes.
    • 4. Cream butter, sugar and vanilla.
    • 5. Add eggs one at a time, beating well after each addition.
    • 6. Stir in date mixture.
    • 7. Sift flours. Fold into creamed mixture. Mixture should be a moist consistency.
    • 8. About three quarters fill each muffin cup in tray.
    • 9. Place into a moderately-hot oven and bake for approx. 15 minutes.
    • 10. While muffins are cooking prepare Caramel Sauce.

    Caramel Sauce Method:

    • 1. To prepare sauce, mix cream, butter and sugar together in a small saucepan. Bring to the boil over a gentle heat until ingredients are just combined.
    • OR
    • Place cream, butter and sugar into a small microwave safe bowl. Microwave on high for 1 minute and stir. Microwave for another 1 minute.
    • 2. Serve hot or cold over muffins, with whipped cream, custard or ice-cream as desired.
