Ingredients
- 1 purple sweet potato
- handful of fresh greens
- chickpea tuna salad
- 1 cucumber
- 1/4 purple cabbage
- pumpkin
To Serve:
- ORGRAN Corn Crispibread™
Method
- Roast the pumpkin in the oven with fresh rosemary sprinkled on top for 40 mins.
- Meanwhile, steam the sweet potato until soft. Prepare chickpea tuna.
- Assemble your veggies, pumpkin, sweet potato & chickpea tuna salad in a bowl and season with chilli flakes, black pepper and lemon juice
- Serve together with crispibread™ So good for scooping up that chickpea ‘tuna’. ENJOY
