Melting Moments With Passionfruit Icing Centres - Orgran

Ingredients

  • Biscuit Ingredients -
  • 1 1/2 cups Orgran All Purpose Plain Flour
  • 1/3 cup Orgran Custard Mix
  • 1/3 cup cornflour
  • 1/2 cup icing sugar mixture
  • soft unsalted butter or salt-reduced monounsaturated margarine
  • 1/2 teaspoon vanilla
  • Passionfruit Icing Ingredients -
  • soft butter
  • 1/2 teaspoon vanilla
  • 4 tablespoons passionfruit pulp, seeds removed & discarded
  • 1 cup icing sugar mixture, sifted

Method

  • Biscuit Method -
  • 1. Preheat oven to 150°C (300°F).
  • 2. Prepare 2 flat oven trays by spraying with cooking spray. Line base of trays with baking paper.
  • 3. Sift flour, custard powder, cornflour and icing sugar into the bowl of an electric food mixer. Add butter and vanilla.
  • 4. Mix until ingredients are just combined. Do not over mix.
  • 5. Lightly dust hands with gluten free flour and roll portions of mixture into balls approx. the size of a walnut. Place onto prepared trays. Use a fork dipped in gluten free flour to press flat.
  • 6. Place into a moderately-slow oven and bake for approx. 20 minutes or until very pale golden brown and cooked.
  • 7. When cooked, remove from oven and leave on trays for 2 minutes. Loosen biscuits and leave on trays to cool.
  • 8. While biscuits are cooling, make Passionfruit Icing.
  • Passionfruit Icing Method -
  • 1. Place all the ingredients into a small bowl.
  • 2. Mix ingredients until well combined. Mixture should be a spreadable consistency.
  • 3. Join cooled biscuits with Passionfruit Icing. Allow icing to set.
  • 4. Store biscuits in an airtight container.
