Greek Lamb Patties w/Minted Rice - Orgran

Ingredients

Greek Lamb Patty Ingredients:

  • minced lamb
  • 1/4 cup ORGRAN Rice Crispi™ Crumbs
  • 1 egg, lightly beaten (or 1 tsp ORGRAN No Egg™ Egg Replacer, prepared as pr packet instructions)
  • 1 tablespoon lemon rind zest
  • 1 teaspoon dried oregano
  • 1 clove garlic, peeled and crushed
  • 2 tablespoons olive oil
  • 1 tablespoon pitted black olives, finely chopped
  • salt and freshly ground black pepper, as desired
  • 2 tablespoons olive oil, extra for frying patties

Minted Rice Ingredients:

  • 2 cups cooked rice
  • 1/2 cup fresh parsley, finely chopped
  • 2 tablespoons fresh mint, finely chopped
  • 2 tomatoes, finely diced
  • 1 red onion, peeled and finely chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice

Method

Greek Lamb Patty Method:

  • 1. Place all the ingredients, except extra olive oil, into a medium-sized mixing bowl and mix well.
  • 2. Shape mixture into serving portions. Chill for 15 minutes before cooking.
  • 3. Pour the extra olive oil into a large frying pan. Heat oil over a moderate heat. Add meat patties and cook until firm. Turn and cook on the other side.
  • 4. When patties are cooked, drain on absorbent paper.
  • Serve hot or cold with Minted Rice.

Minted Rice Method:

  • 1. Place all the ingredients into a medium-sized mixing bowl and mix well.
  • 2. If patties are served warm, rice can be warmed in the microwave if desired.
