Method

Cake Method:

  • Pre heat your oven to 180°C/350°F.
  • Line the base of 2 X 20cm cake tin with baking paper.
  • Sift together flour, No Egg™ and salt; set aside.
  • Beat sugar and butter on high speed until combined.
  • Add vanilla essence and baking soda to mix, combine.
  • Add golden syrup and mix until well combined. Continue mixing and add milk gradually.
  • Add flour mix gradually, continue mixing.
  • Add the mixture to 2 cake tins and cook in the oven for 15-18 minutes.
  • Remove the cakes from the oven and allow it to cooled down whilst you make the butter cream.

Filling Method:

  • To make the butter cream beat the butter until it’s smooth and then gradually beat in the icing sugar until it is all mixed together, beat the vanilla essence in at the end.
  • When the cakes are completely cool spread the butter cream to the top of the base layer and add the jam on top followed by the top layer. To serve, sieve some caster or icing sugar over the top.
