Classic Vanilla Cupcakes - ORGRAN Health and Nutrition

Ingredients

Cupcake Ingredients:

  • 3 cups ORGRAN All Purpose Plain Flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 4 teaspoons ORGRAN No Egg™ Egg Replacer
  • 8 tablespoons water
  • 2 cups non-dairy milk
  • 2/3 cup canola oil
  • 1 cup caster sugar
  • 1 teaspoon vanilla extract

Icing Ingredients:

  • 3/4 cup non-dairy margarine
  • 1 1/2 cups pure icing sugar
  • 1 teaspoon vanilla extract
  • sprinkles (optional)

Method

Cupcakes Method:

  • Preheat the oven to 180°C and line a cupcake tray with cupcake cases.
  • Whisk together the No Egg™ and water. Set aside.
  • In a large jug, whisk together the non-dairy milk, canola oil, caster sugar and 1 teaspoon of vanilla extract.
  • Add the No Egg™ mixture to the milk mixture and set aside.
  • Sift together the flour, baking powder and baking soda.
  • Pour the wet mixture into the dry and whisk until few lumps are left.
  • Distribute the batter evenly amongst the cupcake cases and bake for 30 mins, or until a skewer comes out clean when inserted into the cupcake.
  • Set aside and allow to cool completely.

Icing Method:

  • Make the frosting by using an electric mixer to whip the non-dairy margarine until light and fluffy.
  • Add the remaining vanilla extract and sift in the icing sugar. Mix until light in colour.
  • Pipe onto the cupcakes and add sprinkles before serving.
