Cabanossi Vegetables - Orgran

Ingredients

  • 3 tablespoons olive oil
  • diced onion (approx. 1 medium onion)
  • 2 cloves garlic, peeled and crushed
  • potato (approx. 4 large potatoes)
  • 3 tablespoons olive oil
  • sliced cabanossi
  • cauliflower (approx. ½ cauliflower)
  • 3 tablespoons olive oil
  • 3 tablespoons olive oil (additional)
  • almond slices
  • 1/4 cup ORGRAN Multigrain Crumbs with Quinoa
  • 1 tablespoon finely chopped lemongrass
  • 2 tablespoons curry powder, as desired

Method

  • 1. Pour 3 tablespoons oil into a large heavy-based frying pan. Warm over a gentle heat. Add onion and garlic. Sauté (lightly fry) onion and garlic. Remove onion and garlic from pan and set aside.
  • 2. Peel potatoes and cut into small cubes. Pour 3 more tablespoons olive oil into frying pan. Heat oil over a gentle heat. Add potato to frying pan. Increase heat and fry until potato is golden brown and cooked. Remove potato from pan and set aside.
  • 3. Add cabanossi to pan and lightly fry. Remove cabanossi from pan and set aside.
  • 4. Cut cauliflower into small pieces.
  • 5. Add 3 more tablespoons oil to pan. Add cauliflower and lightly fry. Do not overcook. Remove cauliflower from pan and set aside.
  • 6. Add 3 more tablespoons oil to pan. Add sliced almonds and fry until golden brown. Stir in ORGRAN multigrain crumbs, lemongrass and curry powder.
  • 7. Return onion, garlic, potato, cabanossi and cauliflower to frying pan. Warm over a gentle heat, stirring to prevent vegetables sticking to pan.
