Ingredients

Salsa

  • 6 cherry tomatoes
  • ½ red onion diced
  • pepper

Avocado

  • 1 avocado, smashed roughly
  • 1 teaspoon lemon juice

Method

  • Combine salsa ingredients and set aside.
  • Combine smashed avocado with lemon juice. Set aside.
  • Combine vegan eggs ingredients and whisk. Heat oil in a pan and over medium heat scramble eggs until set. Remove from heat. Set aside.
  • Heat corn tortillas.
  • Serve tortillas with smashed avocado, spoon egg mixture on top and spoon salsa.
