Beef Schnitzels with Roast Potatoes - Orgran

Ingredients

  • Roast Potatoes
  • 1/4 cup ORGRAN All Purpose Plain Flour
  • 1 tablespoon ORGRAN Gravy Mix
  • 4 potatoes
  • 1/2 cup olive oil
  • ground sea salt
  • 12 tablespoons rosemary leaves
  • 6 tablespoons sage leaves
  • Beef Schnitzels
  • 4 thin beef schnitzels (approx. 100g each)
  • 2 tablespoons lemon juice
  • ground sea salt and freshly ground black pepper
  • 1/4 cup ORGRAN All Purpose Plain Flour
  • 1 tablespoon ORGRAN Vegetable Gravy Mix
  • 1/2 cup pine nuts (or try pumpkin seeds)
  • 2 tablespoons olive oil
  • 1/2 cup fresh flat leaf parsley leaves
  • 12 black olives

Method

  • Roast Potatoes
  • Preparation time 20 minutes
  • Cooking time 35 minutes
  • Potatoes are dusted with ORGRAN Gravy Mix and ORGRAN Plain Flour before roasting. This gives the potato a lovely flavour.
  • 1. Preheat oven to 170°C (350°F).
  • 2. Prepare a large flat baking tray by spraying with cooking spray. Line tray with baking paper.
  • 3. Put flour and gravy mix into a plastic bag. Shake to mix ingredients.
  • 4. Peel potatoes and cut into small pieces. Place potato into bag. Seal bag and toss potato in flour and gravy mix.
  • 5. Spread potato over prepared tray.
  • 6. Gently pour oil over potato. Sprinkle salt over potato. Sprinkle rosemary and sage leaves over potato.
  • 7. Place into a moderately-hot oven and bake for approx. 30 minutes or until golden brown and cooked.
  • Beef Schnitzels
  • It is important not to overcook beef schnitzels, as they may become tough.
  • Cooking time 2 minutes (cook schnitzels just before potato is cooked).
  • Preparation time 15 minutes
  • 1. Place schnitzels into a flat dish. Pour lemon juice and any juice from olives over schnitzels. Sprinkle with salt and pepper. Set aside for 5 minutes. Turn schnitzels and leave for a further 5 minutes.
  • 2. Put flour and gravy mix into a plastic bag. Seal bag and toss schnitzels in flour mixture.
  • 3. Place pine nuts (or pumpkin seeds) into a frying pan. Cook until light golden brown. Take care not to burn pine nuts. Remove pine nuts from pan and set aside.
  • 4. Pour oil into frying pan. Heat over a gentle heat.
  • 5. Place beef slices into pan. Cook for 1 minute. Turn and cook for 1 minute.
  • 6. Serve beef with pine nuts, parsley leaves, olives and roast potatoes. Salad can be served as desired.
