Apricot & Almond Slice - Orgran

Base Ingredients:

  • dairy-free margarine
  • caster sugar
  • 1/2 teaspoon vanilla essence
  • 3 teaspoons ORGRAN No Egg™ Egg Replacer, as per packet instructions
  • 1 cup almond meal
  • 2 cups ORGRAN Self Raising Flour
  • 1/2 cup ORGRAN All Purpose Plain Flour
  • canned apricot halves
  • 1/2 cup apricot jam, to spread over apricot base of slice

Coconut Topping Ingredients:

  • 2 teaspoons ORGRAN No Egg™ Egg Replacer, as per packet instructions
  • 1/4 cup caster sugar
  • 2 cups desiccated coconut
  • 1/2 teaspoon vanilla essence


Base Method:

  • 1. Preheat oven to 160°C (325°F).
  • 2. Prepare a 30cm x 20cm (12" x 10") slice tray by spraying with cooking spray. Line base and sides of tray with baking paper.
  • 3. Cream margarine, sugar and vanilla.
  • 4. Add egg mix and beat well.
  • 5. Stir in almond meal.
  • 6. Sift flours. Add to creamed mixture. Mix well to combine ingredients. Mixture should be a firm consistency.
  • 7. Press pastry into prepared tray.
  • 8. Strain juice from apricots. Use juice as desired. Gently press apricot halves (cut side down) into pastry in tray.
  • 9. Put jam into a small microwave safe bowl. Microwave on high for 30 seconds and stir. Microwave on medium-high for 1 minute and stir.
  • 10. Spread apricot jam over apricots and pastry.
  • 11. Prepare Coconut Topping.

Coconut Topping:

  • 1. Place all the ingredients into a medium sized mixing bowl and mix well.
  • 2. Spread Coconut Topping over apricot jam on pastry base.
  • 3. Place slice into a moderate oven and bake for approx. 40 minutes or until pale golden brown and cooked when tested.
  • 4. When cooked, remove from oven and leave in tray to cool.
  • 5. When cold, cut into squares.
  • 6. Remove slice from tray and store in a covered container in the refrigerator.
  • Tip - This slice can be served with whipped cream, custard and/or ice-cream.
