Apple Pie

Ingredients

1¾ cup & 2½ tbs. Orgran self-raising flour (250g)
110g butter
1/3 cup sugar (75g)
1 egg yolk
¼ cup maize corn flour (35g)
1 tsp. vinegar in 1/3 cup of water
Apricot jam
Can of apples
½ cup of applesauce
1 tbs. lemon juice
Cloves

Method

  1. Cream butter, sugar and egg yolk
  2. Mix corn flour and self-raising flour to the water mixture – may require extra water
  3. Roll out to required pie plate size (approx. 2/3 of mixture)
  4. Spread a layer of apricot jam over pastry then place pie shell in fridge to set.

To make filling:

  1. Place all ingredients in saucepan and heat to blend together (add sugar and thicken with maize corn flour if desired).
  2. While warm add filling to chilled pie shell. Roll out remaining pastry.
  3. Place on top of apples. Trim edges and place 2 knife holes in centre.
  4. Brush with lightly beaten egg with and sprinkle with sugar.
