Spaghetti Eggs Florentine

Ingredients

  • 1 package Orgran Italian Style Spaghetti
  • 1 tablespoon Butter
  • Fresh spinach
  • 4 Eggs
  • Salt and pepper, to season
  • 2 Egg yolks
  • 2 tablespoons Hot water
  • Butter, melted
  • teaspoon Lemon juice
  • Salt and pepper, to season

FOR THE HOLLANDAISE SAUCE

    Method

    • To make the hollandaise, place the egg yolks in a glass bowl over a pan of simmering water. Whisk in the hot water.
    • Very slowly, add the melted butter, trying not to add the milky residue at the bottom. Whisk until incorporated.
    • Whisk in the lemon juice and season with salt and pepper, then set aside.
    • Cook the ORGRAN Italian Style Spaghetti according to packet instructions.
    • Meanwhile, in a large frying pan, melt the butter and add the spinach. Stir until wilted, then drain and season with salt and pepper. Remove from the heat.
    • Poach the eggs to your liking and put those to one side too.
    • Drain the ORGRAN Italian Style Spaghetti, toss in a little more butter, add the spinach, stir through and divide between 4 plates.
    • Top each with a poached egg and spoon over the hollandaise before serving.
